I have to admit, I’ve been seriously uninspired lately when it comes to my dinners.  I’ve been sick, along with my fam, for about a month now, on and off.  Blech!  So, trying to get back in the swing of things now….hopefully you will post some ideas on Facebook, as well, and we can all get inspired!

New Week, Some New Meal Ideas!!

So, it’s the first FULL week back to work for lots of you and I know the stress of “this will be the longer week ever” is, well, stressful.  So, I’ll help take some of that stress away with some easy meal inspiration for your week.

Yea! I finally have a kitchen! (And, new meal ideas for your week!)

I am so happy we finally have a working kitchen!  Carryout gets boring (and unhealthy!) really quick.  The kitchen remodel was pretty quick and painless and I am thrilled with my new, bright kitchen!  Goodbye outdated orange cabinets, dark red walls and Angry Birds lookin’ backsplash!  One more day of touchups and grouting and I can finally move stuff back in (and get all the clutter out of my dining room!).  And, the next big project….the floors.  But, that’s gonna take awhile.

5 Nights of Meals!

Hope everyone had a fabulous Thanksgiving holiday and weekend.  As we get into the mayhem of the “holiday rush,” things get super busy and you are probably in need of some meal ideas now more than ever!  We’re in the midst of re-doing our kitchen (Merry Christmas to ME!), so this week, my kitchen is pretty much a mess.  So, with that in mind, I’ve planned some meals using my Griddler (grill pan AND panini press) and Slow Cooker.

MONDAY: Grilled Swordfish w/Lemon-Thyme Herb Butter, Orzo, Green Beans

TUESDAY: Breakfast for Dinner!  Pancakes, Bacon, Potato Latkes

WEDNESDAY: Slow Cooker Pork BBQ Sandwiches, Cole Slaw, Chips

THURSDAY: Grilled Balsamic Veggie Paninis w/Rosemary White Beans, Asparagus

FRIDAY: Pizza Night!!!

My philosophy is simple, and I’ve said it SO many times, but it’s worth repeating.  Planning is EVERYTHING.  If you can plan several meals for your busy week and shop according to those recipes, you are so far ahead of the game.  Your family will eat better, healthier, and you won’t waste as much food!  ANYONE can follow a basic recipe, but the planning part is often frustrating and time consuming.  That’s my specialty and what I love to do!  Hopefully, you will be inspired to try something new for your family this week.  Post your ideas, too, on  my Facebook page: facebook.com/DailyDinnerDilemma!
